Who loves Mexican food? I’m all over it, I love the spiciness, the beans and the flavour itself. It’s over and over delicious. Though sadly it’s not known as the most healthy food as a result of its containment of high saturated fats, meat and other rather unhealthy things. However, good news, did you know that Mexican food isn’t as bad as its reputation? Actually, it can be really healthy. It contains most of the time a lot of veggies, like carrots, corn, tomatoes and so on and of course beans. And beans are so nutritious! They have a lot of fibre, protein and good carbs, all you need for fuelling your body, right? Also, the spices used in Mexican cuisine are pretty healthy. Chilli is good for boosting your metabolism and garlic improves your immune system.

You see if you choose fresh ingredients you can have the best and most delicious Mexican dish, and in addition it is giving your body all it needs to work properly.

As I love spicy Mexican food, I want to share my all time favourite Mexican Chilli Bowl with you today. It is so simple and yet so delicious!

So, what are we waiting for? Let’s get cooking.

Prep: 10 min • Cooking: 15 min • Total: 25 min • Difficulty: easy • Servings: 2

Ingredients:

1 can of beans (any kind is possible, I chose white beans)

1 large carrot

1 onion

1 large capsicum

2 large tomatoes

5 mushrooms

1 rod of leek

1 clove of garlic

1 small can of corn (or frozen corn is also possible)

1 Tbs. tomato paste

¼ Tsp. grounded chilli

½ Tsp. salt

½ Tsp. pepper

1 Tsp. grounded capsicum

½ Tsp. nutmeg

1 Tsp. thyme (or fresh one if you have, about a quarter of a bunch)

Oil for the pan

Method:
  1. Chop all your veggies in small pieces and open the cans.
  2. Stew veggies, starting with carrots then capsicum and mushrooms, followed by leek and last but not least onions, garlic and tomatoes.
  3. After everything is well roasted add the tomato paste, beans and corn.
  4. If necessary add some water, but not too much, just so nothing burns.
  5. Finally add the herbs and spices and stir well. Let the flavour evolve for 5 minutes and it is ready to eat. Enjoy!

P.S.: Make sure there is no added sugar or conservatives in your cans, other wise they’re not very healthy 😉

Also remember it’s all about balance so even if you have traditional Mexican food at a restaurant with the full load of cheese, no worries, you’ll be fine.
